My Easy, Go-To Fish Dish

I like this dish because it consists of ingredients I usually keep on hand.  If something is missing, it's no biggie to just sub something else or leave it out. I made this way back and it became one of my go-to dishes. It's good for lunch or dinner. It's also super quick to make and doesn't dirty up a lot of dishes. Just one.

Frozen or fresh fish fillet. (I keep frozen Tilapia on hand.)
1/2 c. frozen corn
1 15oz can diced tomato
Fresh baby spinach OR baby kale
Baby carrots (optional)
1/2 tbsp. butter
3-4 shakes of Louisiana hot sauce.
1 tbsp. minced garlic
Lemon juice
2 tbsp. italian dressing
Lemon pepper marinade
Salt (to taste)
Pepper (to taste)
2 tsp. Italian seasoning
Prep time-5 minutes
Cook time-approximately 15 minutes

This dish serves one large portion. You could easily add in more veggies and additional fillets to serve more. I frequently throw on a couple extra fillets and split it up between the kids and I. 

Put greens in pan and top with drained diced tomatoes, corn and hot sauce. 
Add in fish fillet and drizzle with dressing and marinade.
Spray fish with a generous covering of lemon juice.
Brush fish with Italian seasoning and garlic.
Season with salt and pepper. 
Top with butter. 
Cover and steam on the stove top until greens are tender and fish cooked through. 
(internal temp of  145 and white all the way thorough)

Drain some but do serve with a little pot liquor (juice from the pan), for taste.
