Healthy Cheese and Veggie Bake

I got this recipe from a friend and changed it up a bit. I made it a lot when I was on my quest to drop the baby weight. It's healthy and satisfying. It's also easy to customize to your tastes by throwing in your favorite veggies.

2 bell peppers, chopped to bite sized pieces (color of choice)
2 tbsp. extra virgin oil
1 onion, diced
1/2 c. sundried tomatoes
3 tbsp. minced garlic
1 zucchini, chopped
Salt, pepper and Italian seasoning (to taste)
1 14oz. can artichoke hearts, quartered or halved
1/2 c. banana peppers
1/4 c. mushrooms (optional)
4 egg whites
1.5 c. shredded cheese blend (Your choice. I recommend something with cheddar)

-Saute peppers, onion and minced garlic with some olive oil for a few minutes
-Throw in chopped zucchini and cook until slightly translucent.
-Salt, pepper and season to taste.
-Turn off heat and mix in the artichoke hearts, sun dried tomatoes, banana peppers and mushrooms (if using).
-Coat a medium casserole dish with olive oil or cooking spray.
-Spread everything in the dish.
-Separate the whites from the eggs and coat the top of the dish evenly.
-Bake at 350 for 15 minutes, until the eggs are fully cooked.
-Top with cheese. 
-Bake for an additional 5 minutes.
